Fig, Feta & Rocket Salad
Like so many Marlborough locals, we love supporting and encouraging local growers, makers and artisans who care about quality, the environment and their craft. Emily of Marlborough’s Old Road Estate has been a long-time supporter and friend of Wairau River. We’ve always loved seeing her smiling face on her visits to the restaurant. Fig season is just around the corner and we cannot wait. Meanwhile, we’re excited to have purchased a supply of Old Road Estate Chocolate Coated Candied Figs to include in gift bags we’re preparing.
Emily has kindly allowed us to share this recipe from Old Road Estate. Perfect for a light lunch with a glass of Wairau River Sauvignon Blanc, Viognier or Summer Riesling.
Ingredients
4 cups fresh rocket leaves
4 fresh figs, sliced
1/2 cup feta, crumbled
1/3 cup toasted almonds (or use walnuts), roughly chopped
½ avocado, cut into cubes
Dressing
3 Tbspn extra virgin olive oil
Juice of 1 lemon
Coarse sea salt
Freshly ground black pepper
Method
Combine the dressing ingredients in a small jar with a lid. Shake until well combined.
Place the rocket onto a serving platter and scatter over the figs, feta, almonds and avocado. Drizzle over the dressing just before serving.
