Freshly Shucked Oysters in the Half Shell with Rock Sugar, Lime & Coriander Dressing


Rock sugar, lime & coriander dressing

  • 300g coriander root and stem
  • 250g long red chilli, de-seeded and chopped
  • 75g garlic
  • 1lt water
  • 250ml rock sugar syrup (dissolved in water)
  • 150ml rice wine vinegar
  • Salt and white pepper
  • 2 tomatoes deseeded and finely diced
  • Fresh lime juice


  1. Blend chilli, coriander root and garlic until smooth
    1. Add water, sugar, vinegar and cook on low for 45 minutes
    1. Add salt and pepper and adjust seasoning.

Let cool and add chopped coriander leaf, diced tomatoes and fresh lime juice

Shuck oysters and spoon dressing over, garnish with coriander leaf
