Deeply coloured with an earthy bouquet and strong plum and black pepper flavours woven with a fresh acidity. Bottled unfined and unfiltered to retain subtle complexities, some natural sedimentation may occur.
Hand harvested in the early morning the grapes were destemmed into small open top tanks with some whole bunches added halfway through filling. The berries went through cold maceration for 5 days, followed by warming and inoculation with two species of cultured yeast. Post fermentation maceration allowed the tannins to integrate, followed by draining off and pressing. The wine was then taken to French oak barriques for a period of 12 months. Malolactic fermentation occured in spring followed by a sulphur addition prior to blending. The wine was then bottled unfined and unfiltered.
